The physical and chemical characterisation of olive oil is not the only requirement for its complete categorisation. To ensure the quality of the oil produced, organoleptic or sensory analyses are used to study parameters such as its colour, flavour and aroma.
ISR’s Smart-Nose device is a smart device with cloud connectivity that allows information on the organoleptic characteristics of the oil to be extracted in real time and integrated into the production chain.
It allows to capture the olfactory response with scan cycles of up to 1 second.
